I apologize early if I simply do not understand how Stage is supposed to work here.

I'm one of those folks that have a Pico and a Tau. When using the Pico in Stage I actually see the name of the tonic and scale. When I use the Tau in Stage I just see numbers. Is this by design? Is there a way to see the label instead of numbers?

Hi,

ah, another Tau user - we are a little bit underrepresented here atm :)

The scale names in the Pico stage tabs are just the names of the trigger buttons. The text is static and wouldn't change if you change the scale. As the Tau setup also contains buttons to browse (and thus change) the scales presumably it wouldn't make sense to write down the initial mapping as it is much more likely to be changed via the tab.
If you like the named variant better and are not planning to change the mapping you can easily edit the texts and add the scale names:
* click on the lock (it should be open)
* click on the edit icon
* click on the trigger buttons one by one and edit the text in the "Name" field
